My hubby decided he was going to support me in my effort in my raw food diet by requesting a raw food dinner when he came home from his 4 day trip to Canada. Very shocking to me because the poor man has been eating out of a lunch box the entire time, but hey! who am I to deny him. So I did what I could. You would think he would want a nice, home-cooked, hot meal. I am very new to this and trying not to be a carrot sucker and am trying as many new recipies as I can. So for dinner I made him zesty pesto pasta. The entire family (except for my oldest...who refused to even try it) found it to be quite yummy (including my youngest!). She was not thrilled with sight of it, but once she tasted it, she ate her entire bowl. I was very proud of her. It was the first time I got to try out my new "turning slicer". It worked wonderfully. It is all made of plastic which I was fairly disappointed in. But as far as doing the job...it works great. It turned my zucchini into a spiral speghetti, just as advertised. Imagine that...a product that actually delivers on it's word! I also made him cookies for dessert (the only ingredients were oatmeal, dates, raisins and cinnamon). Extremely easy...very tasty!
Zesty Pesto Pasta:
1 1/2 cups fresh basil, packed
1/3 cup pine nuts (I substituted almonds for lack of oine nuts)
1/3 cup walnuts
1/4 cup olive oil
1 tsp minced garlic
1/2 tsp sea salt
place all in food processor, blend until creamy. toss with zucchini pasta.
I have no recipie for the cookies, I kind of eye ball everything but I will try to break it down. Place the following in a food processor: about 1/2 c. dates, 1/2 c. raisins, pinch of cinnamon and about 1/4 c. oatmeal. blend until it forms a big ball. remove and hand mix about another 1/4 c. oatmeal(or as much as you like...can't really mess it up).
